Basically, it’s an online inspiration board. You can create as many “boards” as you like for anything that interests you. Once you create a board, you can “pin” things to it by surfing the internet, or Pinterest, itself!

Anyways, I have a board dedicated to recipes. A while ago, I pinned a copy-cat recipe of Chipotle’s Cilantro Lime Rice. Chipolte is hands down my favorite place to eat (I know, narrow, man). The main reason is for their rice. It’s absolutely amazing! So when I found this how-to, I had to try it!
My husband, James, and I were over at my parent’s Monday and decided to make them fajitas. I thought, what would go better than Cilantro Lime rice. Let me answer that for you…NOTHING!
Here’s what you’ll need:
- 1 cup basmati rice
- 1 tbsp of lime juice
- 2 cups of water
- 1 tsp of salt
- 3 (ish) tbsp of fresh chopped cilantro
- 3 tsp veggie oil
And here’s how:
In a pot, add rice, water, and 1 tsp of oil and salt. Boil on high until most of the water has evaporated. Once the water just skims the top of the rice, reduce heat to low and cover for 15 minutes. Then turn off the burner and let it sit for another 5 minutes.
Once your rice is done, mix in the rest of the ingredients and presto! If your rice seems a little dry, add another tsp of oil in with it.
